Everyone, meet Kristin.  Kristin is my go to ‘what should I make for dinner’ gal.  I have sent her texts on many afternoons asking just that.  She always has a quick, easy idea for me.  She is a woman that likes to cook and is not afraid to try new things in the kitchen.  She cooks all kinds of things from main dishes to sweets.  She admits that she is a bit weak on her side dishes…hmmm I doubt that.  Anyway, I have asked Kristin to be our resident recipe expert.  You will be hearing from her a couple times a month with some great recipe Yumminess!

Proof that this woman knows what is up in the kitchen....a Boston Cream pie. YUM!

Rachel asked me to share a few ‘summer’ recipes.  Here are a few that came to mind.  I look forward to sharing more recipes with all of you!  Next time I’ll post pictures of the finished product 🙂

Black Bean Salad

2 cans black beans, drained
1 Can corn
2 roma tomatoes
1/4 Cup diced red onion
1/4 Cup diced green onions
1 tbsp chopped cilantro
1 Medium jalapeno, seeded and minced
4 tbsp sherry vinegar
juice of 1/2 a lime
3 tbsp honey
1 tbsp salt
1 tsp pepper

Instructions : Mix all ingredients in a bowl and refrigerate for one hour.

Grilled Taco BBQ Chicken

2 tbsp Taco Seasoning
1 tsp Oregano
4 Boneless skinless chicken breast
1 tbsp oil vegetable or olive
1/4 Cup BBQ sauce
1/2 tsp ground cumin

Instructions : Heat gas or Charcoal grill. In a shallow bowl, mix taco seasoning mix and oregano. Brush chicken
with oil; sprinkle with taco seasoning mixture.
Place chicken on grill. Cover grill; cook over medium heat 10 to 15 minutes or until juice of chicken
is clear when center of thickest part is cut. (170 F)
Meanwhile, in small microwavable bowl, mix barbecue sauce and cumin. Cover; microwave on High
30 to 60 seconds or until hot. Serve sauce over chicken.
Oven Directions: Heat oven the 375 F. Line shallow baking pan with foil or spray with cooking spray.
Place coated chicken in pan. Bake 23 to 30 minutes or until juice of chicken is clear when center of
thickest part is cut. (170 F)
