Extra Salsa Recipes

Okay So I have a confession… I LOVE to go grocery shopping (weird right?) I look forward to finding out what is on sale and making out my meal plan for the next few weeks. I usually do pretty good sticking to my list and only getting what I need a few other things might find their way into my cart, but I’m sure I needed them!  I do most of my grocery shopping at publix and love to take advantage of the bogo items every week, however they seem to get me in trouble as well cause if it’s something I use a lot I tend to buy a lot.

For example, I have 10 cans of nonstick cooking spray in my cabinet as we speak…er type, anyway there are only certain things I tend to do this with, cooking spray being one of them… but I’m not giving you recipes about cooking spray. Nope! These recipes both have jars of salsa in them because I went through the pantry this weekend and only had 6 jars of salsa so I figured I better use some (cause they are sure to be on sale again soon!). Both of these recipes are also pretty easy recipes.

will be ready later so that’s always awesome.  Also my husband and I argue weather the burritos are actually burritos or if they are actually enchiladas. The original recipe didn’t call for enchilada sauce but I thought they needed something more so I added some.   My husband says they are now enchiladas.  I don’t care what you call them, they are good and easy to fix on a busy night and that’s really all that matters to me! Hope you enjoy!

Burritos

Buritos...Enchiladas, who cares what you call them, they are yummy!

 

 

 

 

 

 

 

 

1 Pound lean ground beef
1 1/2 Cup salsa
I Can rotel
1 Can corn
8 oz mozzarella cheese
8 flour tortillas
1 Can enchilada sauce

Brown burger and drain. Mix in 1cup salsa, rotel,corn, and cheese. Place in shells and roll. Place shells in greased or sprayed baking dish. Add rest of beef mixture if any left, salsa, enchilada sauce and cheese on top. Bake at 350 for 30 minutes (until cheese is melted).

 

 

Yummy Chicken

 

 

 

 

 

 

1 Can black beans
1 Can corn
1 Jar salsa
1 4oz can green chilies
1 Small onion, chopped
5 cloves garlic, minced
2 tsp cumin
2 tsp garlic powder
2 tsp onion powder

Mix beans, corn, salsa, chilies, onion, garlic and 1 tsp of each spice in crock pot. Place chicken on top of mixture and cook for 7 hours on low or 4 hours on high. Taste and check seasonings and add the rest of spices or more if needed. Chicken should start to fall apart but may need some help from a fork. Serve on top of rice and sprinkle with cheese, or in a tortilla with some sour cream and cheese.
