12 Days of Holiday Treats: Aunt Charlottes Potatoes

*I don’t claim this to be an original recipe, you’ve probably seen it before as funeral potatoes, or cheesy potato casserole.  I’d never had it until after I was married, and it’s Aunt Charlotte’s dish in my hubby’s family.  Thanksgiving and Christmas are the only times I bust out this high calorie treat for my family. 🙂

Shredded Potatoes (or 1 bag of hashbrowns)
1/2 chopped onion
1-1/2 cups sour cream
1 family size cream of chicken
2 cups mozzerella (we use cheddar or a combo of both cheeses.  And lets face it, anywhere from 2-4 cups of cheese)
seasoning sealt
corn flakes
1 stick melted butter

Mix all ingredients together EXCEPT melted butter and corn flakes.  Spread in a 9×13 pan.  Cover with cornflakes and drizzle with melted butter.  Bake at 350 degrees for 30 minutes (* if you use a bag of hashbrowns and they are still frozen baking time will be longer  45-60 minutes)
