12 Days of Christmas Treats: Blarney Stones

Don’t let the name fool you, these treats are yummy!  They have been around for every Christmas that I can remember.  My great-grandmother always made them, then my grandmother took over, and now my mom makes them every holiday season.  I entered them in the county fair when I was a kid.  They have also been sent to many soldiers overseas, including my dad and brother.

Cake:                                                                                                                                                     2 cups sugar disolved in 1 cup boiling water.
Beat 4 egg whites and mix into water/sugar.
Add 2 cups flour and 3 teaspoon baking powder.
Mix in 4 egg yolks.
Pour into 9 x 13 pan and bake at 350 for 30 minutes.

Make frosting using powdered sugar and milk.

Grind peanuts.

Cut cake into small squares. Frost on all sides with frosting.
Roll in crushed peanuts.
